I had a craving for one of my childhood favourite recipes the other day - Peanut Butter Cookies! The thing is, as much as I LOVE that recipe, I also wanted to make something that was a little bit lighter and that would leave me feeling satisfied but without the accompanying sluggish feeling. So I came up with this slightly healthier, refined sugar free version! I also love to create recipes that provide extra nutrition even if you're indulging in a 'fun' food. These cookies are also perfect for little ones (as long as they can have peanuts!!) and Koa LOVED them - although to be honest, he loves anything with peanuts and oats in!

These cookies are gluten-free*, dairy-free and-egg free too! (*Just make sure that the oats and baking powder used specify that they are gluten-free)

Peanut Butter Oat Cookies

MAKES 8

ingredients:

  • 100g Oats
  • 100g Puréed Apples
  • 20g Desiccated Coconut
  • 20g Ground Almonds
  • 30g Peanut Butter*
  • 1tsp Baking Powder
  • 1tsp Vanilla Extract

*I use no added sugar/oil peanut butter (just 100% peanuts)

**If you wanted to sweeten it a bit more then you could add in 1/3 cup Maple Syrup

method:

  1. Pre-heat your oven to 200 degrees Celsius (180 degrees fan assisted) and line a baking tray with grease proof paper.
  2. Combine the oats, desiccated coconut, ground almonds and baking powder together in a mixing bowl.
  3. Stir through the apple purée, peanut butter and vanilla extract until mixed thoroughly.
  4. Divide the mixture into 8 and roll each portion into a ball. Place the balls on the baking tray and flatten slightly to create the cookies.
  5. Bake them for 10 minutes until golden on top.
