Mango Coconut Cookies

These cookies are unbelievably delicious, are dairy free and can be made gluten free. I'm completely obsessed with mango at the moment so these definitely satisfy both my cravings for mango and something sweet. Hope you enjoy these cookies as much as I do. I struggled not to eat the whole batch in one go.

INGREDIENTS:

  • 50g flour of choice
  • 75g coconut flour
  • 30g desiccated coconut
  • 1 ripe banana
  • 1 tsp baking powder
  • 60ml almond milk
  • 60ml maple syrup
  • 60g dried mango

Method:

  1. Preheat the oven to 160^C fan assisted.
  2. Blend the banana, almond milk and maple syrup together.
  3. In a mixing bowl, combine the flours, desiccated coconut and baking powder together before adding in the banana mixture.
  4. Finely chop the mango and add to the mixing bowl.
  5. Roll the dough out onto a floured surface until it’s as thick as a pound coin and cut out 12 cookies.
  6. Bake in the centre of the oven for 15 mins.
