Apple Pie Banana Loaf 1

I craved apple-pie the other day and what could be better than my favourite banana bread but with all that apple pie goodness?!! 😋

This recipe is dairy free (it can also be made gluten-free) and Koa absolutely loved it! Honestly, I have never seen him so excited by food! 🤩 There’s very little added sugar and as always full of amazing fibre - great for keeping our tummies fuller for longer, balancing blood sugar and great for our gut. All of which make the perfect snack or even breakfast!👌🏼

Apple Pie Banana Loaf

SERVES 12

INGREDIENTS:

  • 3 Ripe Bananas
  • 2 Apples (I used pink lady)
  • 2 Eggs
  • 200g Self-raising Flour*
  • 1tbsp Honey
  • 50g Pitted Date
  • 1tsp Ground Cinnamon

*Can use gluten-free flour

METHOD:


  1. Pre-heat your oven to 180^C (160 fan) and line a loaf tin with baking paper.
  2. Mash the bananas and grate the apples into a bowl.
  3. Whisk the eggs and add them in with the honey.
  4. Sift in the flour and ground cinnamon and mix thoroughly.
  5. Finely chop the dates and stir through before transferring the mix into the load tin.
  6. Cover the tin with foil and bake for 40 minutes, remove the foil and bake for a further 20 minutes until cooked through and golden on top!
